Crock Pot Mac & Cheese!

A little while back when I was searching for some new holiday recipes to try for "Tasty Tuesday" and a lovely lady in one of my Facebook groups, Jackie, was kind enough to share one of her holiday side dishes with me. Thanks Jackie! It was delicious!

This mac&cheese is a little different from other recipes I've tried. And I've tried a lot of them b/c mac&cheese is as close to perfection as you can possibly get ;) I never would have thought to add evaporated milk or cheddar cheese soup to the mix but they definitely make for some yummy results!

This one's really simple. Cook & drain your pasta. Toss stick of butter into the crock pot, cover with warm pasta & mix in remaining ingredients. Stir really well.

Cook on high for 1 hour.
Cook on low for 2 hours.
Stirring every once in a while.

 Enjoy the results! 

This was some delicious mac&cheese. Flavorful and creamy. But I can't say this is how I'll be making my mac&cheese on a regular night because this girl is way too damn impatient to wait 3 hours for her mac&cheese but what a fabulous idea for the holidays when oven/stove space is at a premium. Very few dishes to clean too! Great bonus!

Less than 15 minutes on the stove to cook the pasta then you can pop everything into the crock pot and push it into the corner to free up space while you cook the rest of your holiday meal. Brilliant!


Crock Pot Mac & Cheese Recipe

Ingredients
16 oz elbow shaped noodles
1 stick of butter
1t salt
1/4 t pepper
1 can Campbells Cheddar Cheese Soup (10 oz)
1 can evaporated milk (12 oz)
1 bag shredded sharp cheddar cheese (4 cups)
2 beaten eggs
1/2 to 3/4th cup milk
  • Cook pasta and drain
  • Add stick of butter to crock pot and pour cooked pasta over the butter
  • Add salt, pepper, soup, evaporated milk, regular milk to crock pot and stir well
  • Add in beaten eggs (do this after the above so the pasta is slightly cooled)
  • Add shredded cheddar cheese and mix well
  • Cover and cook on high for 1 hour
  • Reduce heat and cook on low for 2 hours (check & stir every once in a while)
  • Stir and serve!
  • Best hot out of the crock pot
