Oatmeal Cookies (A to Z)

Mmmm. I LOVE a good cookie! I make a mean chocolate chip butterscotch cookie. It's fantastic! But it's time to spread my wings. Try new things. Get a little bold! Okay, not really all that bold. But new to me. Oatmeal cookies! Can you believe I've never made an oatmeal cookie? And I love these things!

Running short on time to figure out my O post I raided my kitchen and realized I had everything I needed to make these suckers! Perfect!

They were really easy to make and turned out pretty tasty if I do say so myself. I was running a little short on raisins so I threw in a handful of Ghirardelli semi-sweet chocolate chips to the mix. Yeah, that's my excuse and I'm so sticking to it!

Will definitely be making these again one day.

Ingredients

1/2 cup plus 6Tbsp butter, softened
3/4 cup brown sugar, firmly packed
1/2 cup sugar
2 eggs
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
3 cups Quaker Oats (quick or old fashioned, uncooked)
1 cup raisins
and a handful of chocolate chips ;)

Preheat oven to 350. Makes about 4 dozen cookies. Total time 15 minutes

  • In large bowl beat butter and sugars on medium speed until creamy
  • Add eggs and vanilla. Beat well.
  • In separate bowl mix flour, baking soda, cinnamon, and salt. Mix well then add into wet mixture
  • Add oats and raisins to the mixture and mix until well combined
  • Drop dough by rounded tablespoonfuls onto ungreased cookie sheets
  • Bake 8-10 minutes until light golden brown. Cool 1 minute on cookie sheet then transfer to wire rack to cool.
